January 1st, 1804, Haiti made history by being the first Black republic in the world and the first country in the Western Hemisphere to abolish slavery. The first two days of the calendar is dedicated to commemorate the Independance Day and celebrate Ancestor's Day .
During slavery, only the French colonial masters and plantation owners were allowed to enjoy this delicacy prepared by slaves. After the revolution, the free Haitians were finally able to eat this meal. The soup came to represent Freedom, emancipation and Independence.
The Golden Soup in creole "Soup Joumou", full of butternut or acorn squash, root vegetables like parsnips and carrots, beef and sometimes pasta - is made on New Year's Day to celebrate Haiti's liberation from France on January 1st, 1804, which was also the first time that slaves revolted and successfully formed their own nation.
